When people tell me they do not like avocado I just stare at them blankly.

If you are one of those people who happen to be reading this, I feel for you. I truly do. Avocados are like a best food friend—they fill you up with lots of love (fiber, healthy fats, vitamin C, E and B6), sit with you for hours (you will not be hungry for a while) and help boost your mood (because that is what healthy fats do for the brain).
My favorite way to enjoy avocado is simply mashed with a little salt and pepper right in the skin. See how simple? My perfection.
When I want to get a little fancier, I doll up a slice of toast with avocado and one egg. This might be my favorite way to start the day. I would provide a written recipe but I think the photo speaks for itself. I love recipes like this. Do you, too!?
